Spicy Chickpeas

A healthy, hearty  bowl of goodness

(serves 4)

Ingredients:
  • 175g dried Fairtrade Organic Chickpeas
  • 2 x 400g tinned chopped tomatoes
  • 1 onion grated
  • 2 crushed garlic cloves
  • 1tsp paprika
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • ½ tsp chilli powder
  • 2 tbsp olive oil

Method:
  1. Soak chickpeas overnight
  2. Drain and place in pan with twice the volume of cold water to chickpeas and bring to the boil, then simmer for 45minutes to an hour.
  3. Put the oil in a large microwaveproof dish and add the onion, garlic, paprika, turmeric, cumin and chilli powder. Cover and cook for three minutes, stirring half way through. Next add the chickpeas and tomatoes and mix well. Cook for another 3 minutes, stirring halfway through.
  4. Allow to stand for a minute.
