Spicy Bean Taco Soup (Vegan)

Using Tomato & Chilli sauce from Meru Herbs in Kenya

You will need:
  • ½ jar Meru Herbs Tomato & Chilli Sauce
  • 150g of tomato passata
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1 tin of haricot beans
  • 500ml vegetable stock
  • 2 teaspoon cumin
  • Juice of half a lime (1 teaspoon)

Method:
  1. Fry the onion for 3-4 minutes until golden
  2. Add garlic, cumin, lime juice, passata and cook for 1 minute.
  3. Stir in the stock and beans and bring to the boil. Reduce heat and simmer for 10 minutes.
  4. Garnish with sweet corn, or sliced spring onion and serve with tortilla chips and some grated cheese
