Tomato & Bean Soup

A winter warmer with a kick of heat

Ingredients:
  • 2 tins chopped tomatoes
  • 2 tins red kidney beans, drained and rinsed
  • 500ml chicken stock
  • 2 garlic cloves, crushed
  • juice of one large lemon
  • 2 tablespoons of Tomato & Chilli sauce
 
Method:
  1.  Put the tomatoes, beans and stock in a food processor (in batches in necessary) and pulse   briefly until coarsely chopped but not smooth.
  2.  Transfer into a saucepan and add the crushed garlic, lemon juice and hot chilli pesto and     heat to just below boiling.
  3. Thin with boiling water if necessary. Season, then serve.
