Chicken & Feta Flatbreads

Be the envy of your colleagues at lunchtime

Ingredients for Flatbreads:

  • Chicken Meatballs
  • Plain Yogurt
  • Feta
  • Red Onion, thinly sliced
  • Cucumber, sliced into ribbons
  • Flat lead parsley
  • Olive oil
  • Rainbow Pepper

Method:
  1. Combine Beer Bread mix with the yogurt and knead until a smooth dough is formed.
  2. Dust worktop with flour and cut dough into 4 pieces, roll into balls then roll out into about 0.3cm thick flatbreads.
  3. Heat ½ tbsp butter in a non-stick pan over a medium heat and place one flatbread in the pan and cook for around 1-1 ½ minutes then flip and cook the other side.
  4. Stack cooked bread and keep wrapped with a tea towel and leave to cool
  5. Top the flatbreads with the yogurt, meatballs, cucumber, onion, parsley and remaining feta.  Sprinkle with pepper to serve.
