Sweet Potato, Red Pepper and Coconut Soup

A tried and tested recipe by a local Fairtrade group

Ingredients:
  • 25g butter
  • 1 onion – chopped
  • 15ml (1 tbsp) ground coriander
  • 450g sweet potato – peeled and chopped
  • 2 red peppers – chopped
  • 700ml vegetable stock 
  • 400ml tin of fairtrade organic coconut milk
Method:

  1. Melt butter in a large pan, add onion and cook over a low heat until soft.
  2. Stir in the ground coriander and cook for 2 minutes
  3. Add the sweet potato and red pepper and cook for 5 minutes then pour the vegetable stock over and bring to the boil. Cover and simmer for 20 minutes.
  4. Allow to cool a little and then puree, return to the pan, add coconut milk and season to taste. Heat gently until piping hot then serve at once.
