Sweet Potato, Red Pepper and Coconut Soup
A tried and tested recipe by a local Fairtrade group
Ingredients:
25g butter
1 onion – chopped
15ml (1 tbsp) ground coriander
450g sweet potato – peeled and chopped
2 red peppers – chopped
700ml vegetable stock
400ml tin of
fairtrade organic coconut milk
Method:
Melt butter in a large pan, add onion and cook over a low heat until soft.
Stir in the ground coriander and cook for 2 minutes
Add the sweet potato and red pepper and cook for 5 minutes then pour the vegetable stock over and bring to the boil. Cover and simmer for 20 minutes.
Allow to cool a little and then puree, return to the pan, add coconut milk and season to taste. Heat gently until piping hot then serve at once.
