Lentil Soup

A firm family favourite

Ingredients:
  • 1 large onion diced
  • 3 large carrots (grated in food processor)
  • ½ a turnip (grated in food processor)
  • 8oz fairtrade and organic lentils (Red Split Lentils or Yellow Split Lentils)
  • 3 pints vegetable or chicken stock

Method:
  1. Gently fry the onion for a few minutes.
  2. Add the stock, lentils and grated vegetables.
  3. Bring to the boil and then simmer for an hour.
