Kiri Bath - A Sri Lankan Milk Rice (Vegan)

Delicious with both sweet and savoury accompaniments

Ingredients:

Directions:
  1.  Cook the rice as per the packet instructions.
  2.  Add the coconut milk to the rice and continue to cook on a low heat stirring regularly.
  3.  When the coconut milk has been absorbed and the rice is still moist, remove and flatten out in a                dish or on a banana leaf.
  4.  Cut into a diamond shape with a knife and serve.
  5.  Delicious served with seeni sambol.
