Coconut & Strawberry Ice Lollies

Fairtrade Foodie Fiona has come up with the perfect refreshing solution for those hot summer days, something to help you cool down ... Ice lollies!

Kids will love them and they will be eating real fruit without fuss. The grown ups can enjoy them too especially if you add a bit of lime juice and a shot of white rum or even coconut flavoured rum.  

This is the ideal treat for vegans as they are a proper creamy indulgence. 

This is best made in a blender or a food processor. You will also need lolly moulds or suitable containers to improvise and lolly sticks. 

Makes approximately 8 lollies depending on the size of your moulds.

Method:
  1. Place all the ingredients in a blender and run until smooth. Put a slice or two of strawberry in each mould. 
  2. Pour your mixture into the moulds and carefully place in the freezer for about six hours or overnight. 
  3. Dip the moulds in warm water to help loosen the lollies.   

Drivers must have the lollies without rum!
