Chicken Curry with Kilombero Rice

Can be adapted to suit a vegan diet by replacing the chicken with sweet potato

Method:
  1. Gently fry the chicken until cooked through then set aside to rest
  2. Fry the onion and pepper until soft then add the tin of chopped tomatoes and half a jar of red curry paste
  3. Slice the chicken breasts and add to the curry sauce, mix together and heat gently until everything is cooked through
  4. Cook the Kilombero rice as per the packet instructions and serve with the chicken curry
